Gentilé, who has trained in Michelin-starred kitchens across the country, blends his passion for locally sourced cuisine with a love for the recipes he learned growing up in an Italian-American family — an approach he will showcase at Alyssium, his upcoming restaurant at Rancho Valencia, as well as at two special collaborative dinners here at Twin Farms.
