The cuisine of the Rockies comes to the Green Mountains of Vermont as we welcome Chef Matt Zubrod of Aspen’s’ The Little Nell for a special collaborative dinner. Element 47, Zubrod’s signature restaurant at The Little Nell, has received accolades from the James Beard Foundation, Wine Spectator, Wine Enthusiast, among others. He is known for blending Alpine flavors with coastal influences — a reflection of his experience running high-end kitchens in locales including Hawaii (Mauna Kea Resort), Southern California (Rancho Valencia Resort & Spa), and Colorado (Dish Aspen; BB’s Kitchen).
In addition to overseeing all culinary operations for The Little Nell, which has received the Forbes Five-Star Award for 26 consecutive years, Zubrod partners with Aspen Center for Environmental Studies at Rock Bottom Ranch, which grows herbs, fruits, and vegetables used in the hotel’s kitchens — similar to Chef Nathan Rich’s seasonal approach at Twin Farms.
